ASIAN LUNCH FOR ONE




Was having a craving for sushi today but the -17˚C temperature was making me feel less than ambitious to go out in search of it.

As a compromise I decided to apply a little creativity and use what I had on hand.  The following resulted in a very enjoyable lunch.


Rice paper soaked in warm water for a couple of minutes. 

Steamed brown rice vermacelli tossed with a splash of rice vinegar.

Lemon garlic shrimp (for recipe see post 'Cocktails & Holiday Get-togethers).

Julienne cut carrots & cucumber

Sliced avocado

Enoki mushrooms

Sauce for dipping...

Fish sauce, rice vinegar, sugar, crushed garlic, crushed chilis



...and the results...


 ... with a pleasant Pinot Grigio...
