COOKING FOR ONE ON WINTERY DAYS


This is the week of the big exercise in North Carolina so the Colonel and Major Pig are off playing warrior games.  

As mentioned in a previous post, my sleeping habits tend toward the erratic during times like this.  Today I rose (really) early craving something warm, comforting and flavourful but found a definite lack of attractive options.

It is also very wintery outside so my usual power walk for supplies wasn't very appealing.  I much prefer indoor exercise routines on days like this.  

....so I created the following soup .....

EARLY MORNING WARMING WINTER SOUP


1 large tin of diced tomatoes
1 can chick peas, drained
4 cups chicken or vegetable broth
2-3 large cloves garlic, crushed
2 tablespoons chili powder
1/4 cup lime juice
large handful chopped parsley

Simmer tomatoes, chick peas, garlic, and chili powder in broth for approximately 10 minutes to blend flavours. Add lime juice and parsley.  Makes at 4 good sized servings. 

Note: Would also be good to add some cooked whole grain pasta or soba noodles so will have to pick some up for another time.
